Christmas Pudding

This is a wholesome, traditional Christmas Pudding that has
been enjoyed for generations
Ingredients:
125ml of
currents
250ml of
raisons
250ml of
sultanas
100ml of mixed
peel
250ml of cake
flour
2ml of salt
5ml of baking
powder
3ml of
nutmeg
5ml of mixed
spice
3ml of ground
cloves
125g of
butter
200ml of chopped
suet
125ml of white bread
crumbs
2 eggs
200ml of brown
sugar
25ml of
brandy
25ml of lemon
juice
80ml of milk
Method:
- Wash, dry and dust the
dried fruit with 12 ml of cake flour
- Sieve, flour, salt,
baking powder and spices together
- Rub the flour mixture
into the butter
- Stir in the
breadcrumbs
- Beat the eggs and sugar
together
- Mix the brandy, lemon
juice and milk into the egg mixture
- Add the egg mixture to
the flour mixture and mix well
- Stir in the
fruit
- Pour into a greased
pudding mould and cover with a lid or tin foil
- Steam for 4 hours –
serve hot
