Baked Christmas Cake

  

 

Ingredients

 

 

 

 

Combine and Leave Overnight to Soak:

 

5 x 250 ml of cake mix 

125g dates (chopped) 

300ml of cherries (chopped) 

125ml nuts (chopped) 

125ml of brandy

Next Day Ingredients:

 

250g of butter (or margarine)

250ml of brown sugar

5 eggs

15ml of apricot jam

500ml of cake flour

1.5ml of salt

5ml of nutmeg

7ml of cinnamon

10ml of mixed spice

5ml of ginger

3ml of cloves

3ml of bicarbonate of soda

 

Method:

 

1.    Cream the butter (or margarine) and sugar

 

2.    Beat in the eggs one at a time

 

3.    Mix in the jam and fruit mixture

 

4.    Add the dry ingredients and mix well

 

5.    Line a 20cm square cake tin and pour the mixture in

 

Baking:

 

·         Bake at 150°C (290°F) for 2 ¼ hours (Insert skewer – if its clean, cake is done)

·       Allow to cool completely in the tin

·       Turn out & remove lining

·       Sprinkle with brandy & seal with plastic wrap
